Vegetables


I have not found a vegetable (or fruit) that does not taste better when smoked on the grill.  Whether you are making some of the best home fries you have ever tasted or adding a slight smoke taste to your bruchetta, I promise making vegetables in a smoker will be faster, easier, and tastier.




Home fries
Cut potatoes into cubes.
Coat with olive oil.
Cook direct at 350 degrees in a basket for 40 minutes.
Shake basket every 5 minutes. 
Add salt and pepper when finished.







Bruchetta
Ingredients
              1 French baguette cut to size (I recommend halving the baguette lengthwise and cutting each half into 5 inch slices)
              8 ounces whole grape tomatoes
              4 cloves garlic
              3 teaspoons extra virgin olive oil
              5 tablespoons chopped parsley


Add butter, oregano, and hot pepper flakes to taste to baguette slices.


Add whole grape tomatoes and baguette slices (butter side up) directly to grill at 350 degrees direct heat for 4 minutes.
Flip halfway through. 
Remove from heat, add tomatoes to ice water to cool – 10 minutes. 
While the tomatoes are cooling, dice garlic and parsley.
Cut tomatoes into quarters
Add the tomatoes, garlic, olive oil and parsley to a bowl and mix.
Add mixture to the top of the baguette slices

Stuffed Potato
Cut one inch plugs from ends of potato with a knife
Drill one-inch hole through the potato with a one-inch drill
 Stuff with sausage and cheese,
Replace plugs in ends, wrap with bacon, then wrap with foil
Cook at 350 degrees for 90 minutes or 250 degrees for 160 minutes
Remove from foil and cook for an additional 10 minutes to crisp bacon

Green beans or broccoli
Add to a bowl, coat in olive oil, salt, pepper, toss to thoroughly coat
Cook 450 direct for 25 minutes flipping once halfway through cook

Roasted garlic
Cut tops off elephant garlic
Drizzle with olive oil and wrap in foil
Cook 350 degrees direct heat for 35-45 minutes or until soft
