My Setup


I have a Large Big Green Egg® ("BGE") that I purchased from my local organic butcher.  The BGE is only sold through authorized sellers so this means you need to find an authorized seller near you.  These are also heavy and very breakable, so it is best to have it delivered if you can.  My authorized seller delivered the BGE and set it up for me right on my deck.



According to the BGE website, the Large BGE has the following dimensions:

  • Grid Diameter: 18.25 in / 46 cm
  • Cooking Area: 262 sq in / 1688 sq cm
  • Weight: 162 lbs / 73 kgs
The Large EGG can cook: 20-pound turkeys, 12 burgers, 6 chickens vertically, 8 steaks, or 7 racks of ribs vertically.

While the website says you can cook this crazy amount of meat on it, do not try it, overstuffing the BGE will only result in poor circulation and way longer cooking times.

I also have the BGE nest stand.  This is the wheeled structure that holds the BGE.  You will either need a nest or built in table to hold the BGE because they are very heavy and very breakable.

The BGE place setter is a ceramic insert that sits above the coals for indirect cooking.  As you can see the legs stick up in the air so you can sit the grill on top of the legs.  You turn the place setter legs down to use it as a pizza stone.  Some people also really like cast iron place setters because they can get much hotter.  But I like my ceramic place setter.

The only other accessories you really need are charcoal starters, an ash tool, a good silicon oven mitt, a grid cleaner, a fireproof mat, a replacement bottom grill, beer can chicken rack, and a rib rack.

I think my GBE, nest, placesetter, and ash tool cost around $990.  You can buy other brands for much cheaper and they will cook the same, but I like the BGE.

For charcoal starters, I prefer the long skinny kind because you can break them into quarters and spread them around your coals to get better coal coverage off of one stick.

Ash tools are essential.  They are used to clean the bottom of the BGE of ash before each use, stir any leftover charcoal, lift the grill off of a hot BGE without a mitt nearby, and for a myriad of other uses.

Buy whatever grate cleaner that you want.  My grate cleaner looks similar to this one and cleans the grate pretty well.

Buy a silicon oven mitt.  Don't buy a leather of cloth mitt.  BGEs get very greasy and you will want something you can stick under the faucet to clean once in a while.

I also purchased a fireproof mat to put under by BGE.  This is because my BGE is on my deck and I didn't want hot coals falling on the wood deck an burning my house down.  However, they are also useful because the BGE can make a big mess and they will help you keep your deck clean.

I also have a CyberQ Wifi temperature controller.  I rarely use this item anymore, but at one point it was a lifesaver.  All you need to do is plug it in, insert the fan to the bottom vent, put the grill temperature probe on the grill, put a meat probe in your meat, set the desired temperatures and walk away.  This little device will bring your grill to the correct temperature and keep it there until you run out of coal.  It will also allow you to monitor your meat temperature and set your grill temperature from anywhere.

I also bought a replacement bottom grate.  The bottom grate that came with the egg frequently clogged with ash and small coals and would cause the fire to go out in the middle of the night.

The one I purchased looks like a miniaturized version of the top grate and allows the ash to fall through without clogging.
You should also purchase a rib rack and beer can chicken rack.  The beer can chicken rack holds the chicken upright.

The rib rack will let you cook 4 or 5 racks of ribs at one time.
